A SACRED CROP FOR THE MAYANS
The Maya diet was shaped by a variety of superfoods and recipes that are both nutritious and delicious. Among these, amaranth held significant spiritual value in ancestral times. Its ground form was mixed with maguey honey to create a paste used to sculpt figures for fire ceremonies, where offerings were presented to symbolize gratitude and a connection to the energies of the world.
However, during the Spanish invasion, the cultivation of amaranth was outlawed due to its associations with pagan practices, and it nearly vanished. This resilient plant not only plays a role in the Ab'ix system but is also deeply intertwined with the energy of N'oj, representing health and vitality for the mind.
The prohibition imposed by Spanish colonizers highlights the spiritual importance of amaranth to the Mayans. Despite the challenges it has faced, amaranth has been cultivated for thousands of years, making it more than just a food—it's a cultural treasure that embodies the wisdom of the Mayans.
Today, as we rediscover the power of amaranth, we honor its sacred heritage while introducing its remarkable nutritional benefits into modern diets. Let’s draw inspiration from its rich history and strive to embody its strength and perseverance in our own lives.
THE BENEFITS OF AMARANTH
Amaranth is a gluten-free grain that stands out for its high protein content, making it an excellent resource in combating malnutrition. It is packed with essential nutrients, fiber, and antioxidants, which help optimize metabolism, improve digestion, and boost the immune system.
Rich in calcium, amaranth is one of the most nutritious vegetable-based foods available. It contains a comprehensive array of minerals, proteins, and natural vitamins, including Vitamins A, B, C, B1, B2, B3, as well as folic acid, niacin, iron, and phosphorus.
Due to its remarkable nutritional profile, amaranth is regarded as one of the world's 36 most promising crops. The National Academy of Sciences of the United States has called it "the best food of vegetable origin for human consumption."
